Background
To ensure safe crop production it is vital to identify the main areas of potential contamination from Microbial Pathogens, develop and implement appropriate mitigation strategies to reduce or eliminate these risks. When this is not done effectively it can result in issues such as recently Listeria on sweetcorn, Salmonella on Galia Melons, E coli 0157 on lettuce, to name but a few.

This training course will be developing attendees understanding and knowledge in these areas, to allow them to develop their skill to practically identify and manage contamination risk in real world situations, in a wide range of crop production situations.

The course will cover the following areas:

  • Introduction to microbial food safety including recent issues and trends

  • General overview and background to sources of microorganism in fresh produce and risk management

  • Customer and Legislative standards

  • Strengths and weaknesses of accreditation standards

  • Practical aspects of identifying and mitigating risks within fresh produce:

  • Crop categories and intrinsic environmental risks

  • Manure and grazing

  • Managing contamination risks arising from water

  • Field risk assessments:

  • Managing contamination risks

  • Water sources and risk assessment

  • Managing water use risk post-harvest

  • Water treatment - what systems, how they operate and effectively managing them in a field situation
